Manual harvest. Manual selection of bunches. De-stemming without crushing the berries.
The two varieties were fermented together in used 500L French oak barrels. Gentle piegeage.
After ageing for 19 months in used 500L barrels, we carry out a light fining and subsequent bottling. The wine is rested for a year before being released for sale.
All our wines are sealed with natural cork.
The wines are neither filtered nor cold-stabilized, meaning reposts may form with age. We recommend decanting.
