Organic farming. Manual harvest, organized by vineyard plots to ensure harvest at the right time. Transport in small boxes to avoid crushing. Manual selection of bunches. Cold soak, followed by gentle pressing and fermentation and ageing in 300-litre oak casks from French and Austrian forests for 20 months. No stabilization or filtration (deposits can form in the bottle and thus we recommend decanting).
Covela Fantástico Branco
In 2015, for only the third time in the history of the Covela estate, our winemaking team produced this Covela Fantástico Branco. As the name implies, this wine is produced only in exceptional vintages and when the wine’s evolution in French oak barrels shows particular quality and character. Pale golden in hue, this wine has a complex, exuberant and elegant nose, reminiscent of flowers, spices and minerals. It is creamy with good acidity and excellent grip culminating in a long and persistent finish. Naturally gastronomic, this wine goes very well with fatty fish (turbot, salmon trout) and soft sheep’s cheese (Queijo da Serra and Serpa). Best appreciated in a Burgundy glass at a temperature between 14ºC and 16ºC. Covela has been practicing organic farming since 2011 and has been certified by KIWA-Sativa since 2018.
